Make homemade pesto with your herbs

Here’s a basic pesto recipe you can make using herbs from your Auk. The recipe includes both basil and other herbs for variation. Pesto can be made with many different herbs besides basil - such as parsley, coriander, or mint for a new twist!


Ingredients:

  • 200 ml fresh basil (pressed firmly into the measuring cup)

  • 100 ml fresh parsley (or other herbs like coriander or mint)

  • 50 g pine nuts (can be substituted with walnuts, almonds, or cashews)

  • 50 g grated Parmesan

  • 1–2 garlic cloves (depending on taste)

  • 100 ml olive oil (adjust amount for desired consistency)

  • Salt and pepper to taste

  • (Optional) A bit of lemon juice for freshness


Instructions:

  1. Prepare the ingredients: Harvest basil, parsley (or another herb), and place them in a blender or mortar along with pine nuts, garlic, and parmesan.

  2. Add olive oil: Blend while slowly pouring in the olive oil in a thin stream. Stop and scrape down the sides as needed to ensure everything is well mixed.

  3. Season to taste: Add salt, pepper, and optionally a bit of lemon juice. If you want a thinner pesto, add a bit more olive oil.

  4. Serving: The pesto can be used immediately for pasta, as a spread, or as a sauce for chicken, fish, or vegetables. Store in the fridge.


Pesto Variations:

  • Basil and Mint: Swap the parsley for mint for a fresh flavor that pairs well with lamb or summer salads.

  • Coriander and Lime: Use coriander instead of basil and add a bit of lime juice for a more exotic taste - great with tacos or grilled dishes.

  • Arugula: For a sharper pesto, replace some of the basil with arugula for a more peppery flavor.
