Here’s a simple method for freezing herbs if you have a surplus from your Auk, so you can use them later in cooking.
Freezing Herbs in Ice Cubes with Water
Harvest the herbs from your Auk and roughly chop them, or leave them whole depending on how you plan to use them later. Remember not to harvest more than ⅓ of the plant.
Place the chopped herbs into ice cube trays. Fill each compartment about 2/3 full with herbs (and berries or other ingredients if desired).
Top up each cube with water so the herbs are fully covered. Make sure the water spreads evenly.
Put the tray in the freezer.
What can you use water-based herb cubes for?
Soups: Drop one or more cubes straight into boiling soup for a boost of fresh herbs.
Sauces: Add a cube to sauces to infuse the flavor of herbs without needing them fresh.
Rice or Pasta: Toss in a herb cube while cooking rice or pasta for added flavor.
Freezing Herbs in Ice Cubes with Oil

What can you use oil-based herb cubes for?
Sautéing: Drop a cube into a hot pan to start sautéing vegetables or meat with flavorful herbs.
Marinades: Melt a cube over meat or vegetables to quickly create a marinade.
Soups and Stews: Add an herb-oil cube directly to soups or stews for a tasty base.
Oven Dishes: Use them in baked dishes like casseroles or roasted chicken for added flavor.
By freezing herbs in oil or water, you can easily add flavor to different dishes without needing fresh herbs.
It’s a great way to avoid wasting leftover herbs from your Auk!
