Herb butter goes perfectly with meat, fish, vegetables, or simply on a slice of bread.

Here’s a basic recipe using a variety of herbs. Remember, you can use as many or as few herbs as you like, and choose whichever ones you prefer.

Ingredients:

  • 200 g unsalted butter (at room temperature)

  • 1 tsp lemon juice

  • Salt and pepper to taste

  • 2 cloves garlic (finely chopped or pressed)

  • 2 tbsp or more fresh parsley (finely chopped)

  • 1 tbsp or more fresh basil (finely chopped)

  • 1 tbsp or more fresh thyme (finely chopped)

  • 1 tbsp or more fresh chives (finely chopped)

Instructions:

  1. Bring the butter to room temperature: Make sure the butter is soft so it’s easy to mix with the herbs.

  2. Chop the herbs: Harvest herbs from your Auk and chop them finely.

  3. Prepare the garlic: Finely chop or press the garlic cloves.

  4. Mix the ingredients in a bowl: combine the softened butter with the chopped herbs, garlic, and lemon juice. Stir well until everything is evenly mixed.

  5. Season to taste: Add salt and pepper to your liking, and adjust with a bit more lemon juice for extra freshness if desired.

  6. Shape the butter: Roll the butter into a log using plastic wrap, or store in a small dish. Chill in the fridge until it reaches your preferred consistency.

Voilà! You’ve made your own herb butter.

Tips:

  • Feel free to vary the herbs depending on your taste and what you have on hand - like rosemary, oregano, or dill.

  • Add chili flakes or a bit of mustard for a twist in flavor.

  • Store it in a pretty glass jar and give it as a homemade gift.

  • Herb butter can be kept in the fridge or frozen to last even longer.
